To see if you can get the PR from working at a backpacker hostel, it depends how you explain to the immi why your job is so important to this hostel and the contribution you have been making or you are intend to make, furthermore, if your job is so important, you are supposed to get a decent job position from this hostel , but also your remuneration, salary are also will be matched up with your title.  

So there is not a rigid criteria guild line tells you that what kinda job title, salary, size could satisfy the immi, but of course, you may have already given an explicit and thorough assessment in order to fill up the EOI, so what I am saying is, you may need to be skillful to apply for it rather than asking the lines to take.

to get a new working visa rather than your old one, just get a confirmation letter from your new employer and fill up the variation of condition form, hand it back to immi, they will change it for your and issue you a new visa, but the point you should a wholehearted support from your employer, which is a must
