The notes taken by police constable Altus Snyman on the day of the incident said Wang had told him he was driving about 45kmh and that the horse had "jumped" on his car.
Keiko Fegan, a witness who was driving on the road at the time of the incident, said the car did not move over the centre line when it approached the riders.
"Because that car was going quite fast [the] horse was lifted in the air and fell on the road after that and the lady fell onto the car then fell onto the ditch," Fegan said.
A passenger in Wang's vehicle got out of the car first, before Wang emerged to check his car, she said.
Howard Brownlee, who saw the incident while sitting on his deck, said he saw the vehicle hit the horse without the horse rearing upwards.
"That car went into that horse, that's what I saw with my own two eyes," Brownlee said.

Keiko Fegan, who was driving on the opposite side of road at the time, told the court she moved as far over in her lane as she could to give the driver - a Chinese national - space.
"I did that so he could move over and give the horses room, but he didn't, and he didn't slow down like I had."
